The hanger steak is one of the best kept secrets of every cow — especially in Wagyu. The hanger steak comes from the upper belly of the animal and is called a “hanger” because it hangs from where it is positioned. Translation: this is a muscle meat that isn’t used much. That means it is tender and full of flavor. Some say it is the most tender cut of meat from the cow and it comes with the flavor of a New York. You gotta try it.
